Last week, the team were asked to sculpt this banqueting display for The Roux Scholarship’s award ceremony, celebrating the winner of the competition.

This year’s Roux Scholar is the Eden Hotel Collection’s Harry Guy.

The competition itself is extremely tough. It’s based on technical skill, a strong palate and a deep appreciation and understanding of the history of classical cooking. Many past winners are now internationally renowned restaurateurs.

Since 1984, The Roux Scholarship has been a springboard for British chefs under 30 to train at the greatest restaurants in the world. Now thirty years later, those chefs have returned and changed the gastronomic landscape of the UK.
