Duncan has worked as a chef for some of the best restaurants in London, including: the Mandarin Oriental Hyde Park, Mirabelle, Le Caprice and The Dorchester.
While at The Dorchester, an opportunity came up to sculpt ice for a party. When no one stepped forward Duncan decided to have a go and the rest, as they say, is history.
There is a long tradition of ice sculpting in the culinary world, but Duncan opened Hamilton Ice Sculptors – the first dedicated professional ice sculpting business in London – just over 40 years ago. For 12 years, he was also the only professional ice sculptor in London.
One of Duncan’s favourite jobs was sculpting a polar bear to draw attention to their plight and the effects of global warming. His specialities are the classic sculptures, such as swans and fish, but he also enjoys the lure of an abstract carving.
