Cutting some shapes

When was the last time you had a good look at the ice in your drink? As long it’s in there, most of us aren’t too concerned about its appearance.

But now, a new trend for carving mini ice sculptures instead of using regular ice cubes is becoming more and more popular.

Last week, Duncan and Nick headed over to Soho to teach a special masterclass to a group of bartenders.

Commissioned by Sweet and Chilli, they demonstrated how to create fun-sized ice carvings as part of London Cocktail Week.
